Take Bag Lunch to Work at Least Two-Three Days
Avoid the lunch rush by eating a cold sack lunch in the lunchroom. Saves gas, time, and energy. You also get to practically double the amount of time you spend eating, by avoiding cooking or commuting. Enjoy this luxury more than one time per week, you deserve it. Oh, and it will help save our planet. With all your extra time you can start thinking about other ways to help the environment. Your co-workers will be so jealous ![]()

This is something I have wanted to work on for a long time. It took a little planning ahead, but it was so worth it. It made my day easier because I didn't have to take the time to drive from work to home or a restaurant. After making veggie enchiladas for dinner on Monday, I used the filling to make about 12 burritos, then put them in the freezer. On days when we didn't have leftovers, I could just grab a couple burritos and be set for the day. I still have enough for a few lunches next week, too. Not a bad set-up.

Hi Mel! Serious! Save some money too. Here is a recipe for an extremely cheap, quick and easy mexican (meal?). Take a piece of string cheese, roll it up in a tortilla with some hot sauce, microwave and voila - string cheese quesadilla. Ha! I have some friends from Mexico who are absolutely appalled that somebody would microwave a tortilla, but hey, got to do what you got to do. Note: do not hold cell phone next to microwave to take picture. My microwave is now broken... again. Boo. Okay, not as good, or good for you, as veggie enchiladas, but oh well. Take care!
